Why Did You Choose to Open in Charleston?

Maggie has deep family roots in Charleston and we both have family in Savannah, GA. Maggie’s great-great-aunt was Elizabeth O’Neil Vermeer, a well-known artist and pioneer for the arts.

Josh moved to Charleston in 2014 after living out west for several years and wanted to return to the southern coast closer to family in Georgia. Maggie had been living overseas in Germany and wanted to also return to her southern roots and both researched Charleston & knew it was a great place for young entrepreneurs! Plus we love our water sports, boating, and fishing the Charleston waterways!

Who is Your Typical Client?

Anyone with a love for great food and who likes to have FUN! We’ve worked with a variety of clients: our sweet little southern grandmas to the college-aged crowd looking for an epic bachelorette weekend with girlfriends, everyone is welcomed at Root Note! We offer custom menus to fit a wide range of budgets and tastes.

Tell Us Your Favorite Thing(s) to Do in Charleston.

By land: Go to Folly Beach, grab the brunch burrito and a cocktail from Low Life Bar then watch the sunset at Bowen’s Island.

We also love to take our dogs to the James Island County Dog Park!

By water: We take our boat out as often as we can for some off-shore fishing. We have been in several tournaments & never take for granted the pleasure of fresh-caught fish! We also enjoy paddle-boarding and kayaking.

What’s the Craziest Experience You’ve Had with a Client?

We’ve had a few event planners who unfortunately also thought they were good truck owners and chefs and severely miscalculated how many guests would be at events and then tried to get on our truck and help us cook!! Luckily, we are pros and can handle large crowds, so we knew how to handle the massive influx of hungry event attendees!

Maggie also was hosting a beer dinner where the head brewer and owner of the brewery (and highlight of the dinner) failed to show up on time because he was too intoxicated to make it to the dinner. She had to immediately go into hyper-hostess mode and act as the beer expert and carry on the pairing dinner as if she brewed the beer herself. Guests left happy! The restaurant was happy — everyone left feeling like they got their value!

Where’s Your Favorite Place to Travel Outside of Charleston?

US: Anywhere in the mountains — North Carolina mountains or Park City, UT.

Outside the US: We’ve been to Thailand twice and can’t wait to go back! Also, the Caribbean or Latin America (like Belize or Costa Rica).
